Squidgy Chocolate Brownies

Brownies are a hard one, everyone has their opinion on what makes a good brownie, nuts or not nuts, squidgy or firm, chocolate chunks or no chunks…. its hard to please everyone. However I do believe I have found my favourite brownie recipe – the Hummingbird Bakery Brownie recipe!

This is one the easiest recipes I have ever come across, its quick and makes a very delicious brownie.

Ingredients

200g dark chocolate ( I used Bournville)

175g unsalted butter

325g caster sugar

130g plain flour

3 eggs

Preheat the oven to 170 degrees and grease and line a 33 x 23 x 5 baking tray.

Put the chocolate and butter into a heatproof bowl over a saucepan of simmering water and leave until melted and smooth.

Remove from the heat. Add the sugar and stir until well incorporated. Add the flour and stir until well incorporated. Finally stir in the eggs and mix until thick and smooth.

Spoon the mixture into the prepared baking tray and bake in the oven for about 30-35 minutes, or until flaky on the top. Do not over cook otherwise the edges will become crispy and hard. Leave to cool completely and then tuck in!

Of course you can add extras if you like to make it a bit more of your own, why not throw in a couple of handfuls of chopped hazelnuts or if you want a super chocolate hit some white chocolate chunks. Ads your additions when stirring in the eggs.
